I always focus on veggies and protein for dinner. I also usually cook my chicken breasts in large batches so that I can just reheat, add to whatever else I come up with and enjoy. This dinner took me 5 minutes. Ingredients:
3 large zucchinis, spiraled with one of those handy dandy veggie spiralizers from Amazon 2 chicken breasts, cooked and chopped into bite size pieces 3 tbsp olive oil 1 1/2 tbsp garlic 1/4 of lemon, juiced 1/3 cup grated parmesan avocado, optional salt and pepper to taste Instructions: 1. Add olive oil, garlic, and chicken to large skillet on medium heat. Warm for 2 minutes. 2. Add zucchini and lemon juice to pan. Cook for 2 minutes. 3. Sprinkle in Parmesan and cook until blended. 4. Serve. Top with 1/2 of an avocado, salt and pepper to taste and Parmesan, if desired. 2 servings, but could easily be 3 depending on the size of your zucchinis.
